crumbly feta cheese
a handful of fresh mint
extra virgin olive oil
salt and pepper to taste
- First, drop the broad beans into boiling water for a couple of minutes. When they've softened, drain. If desired, peel the larger, tough ones.
- Toss the broad beans in a bowl with a drizzle of olive oil and the juice of the lemon. Crumble in feta cheese to taste, then add the chopped fresh mint. Season to taste with salt and pepper, then serve.
