How to make broad bean and feta salad

Watch how to make a delicious and summery broad bean and feta salad, perfect to make with the first broad beans of the year, which are typically found in June.

Ingredients:
broad beans
crumbly feta cheese
a handful of fresh mint
1 lemon
extra virgin olive oil
salt and pepper to taste

  1. First, drop the broad beans into boiling water for a couple of minutes. When they've softened, drain. If desired, peel the larger, tough ones.
  2. Toss the broad beans in a bowl with a drizzle of olive oil and the juice of the lemon. Crumble in feta cheese to taste, then add the chopped fresh mint. Season to taste with salt and pepper, then serve.
