Roasting pumpkin seeds

When you're carving your Halloween pumpkin, don't bin the seeds! Pumpkin seeds make a tasty and healthy snack, and also work a treat sprinkled over salads and muffins.
Toasted and salted, pumpkin seeds have a nutty flavour. But you don't have to stop there; roasted pumpkin seeds become even better flavoured with both sweet and savoury spices.

How to roast pumpkin seeds
  • Rinse pumpkin seeds under cold water and pick out the pulp and strings. (This is easiest just after you've scooped the seeds from the pumpkin, before the pulp has dried.)
  • Place the pumpkin seeds in a single layer on an oiled baking tray, stirring to coat.
  • Sprinkle with salt and bake at 170 C / Gas 3 until toasted, about 20-25 minutes, checking and stirring after 10 minutes.
  • Let cool to room temperature and store in an air-tight container.
