How to roast potatoes video

This is a super-easy way of roasting the perfect potato. They are fluffy on the inside and crispy on the outside.

The trick is to par-boil them and shake them in a pan to create a fuzzy edge, before roasting them in pre-heated oil. Once you make these delicious roast potatoes, you won’t be going back to frozen ones again.

Preheat oven to 200-200 C / Gas 6. Place small to medium sized peeled potatoes into a saucepan. Add hot water and salt. Cover and cook for 10 minutes or until a knife can easily be inserted into a potato. Try not to overcook. To make roasted vegetables, simply peel and chop parsnips and carrots and cook for 8 minutes.
Drain off the water and with the lid on, shake the pan to create fuzzy edges around the potatoes. Set aside.
Pour in a decent layer of oil into the bottom of a large roasting tin. Place into preheated oven for 5 minutes.
Add rosemary or sage to the roasting tin and then pour in the potatoes and vegetables, if desired. Shake the tin and roast for 20 minutes.
Turn the potatoes and vegetables over and roast for an additional 20 to 30 minutes or until golden and crispy.
