Rich Chocolate Coffee Cake

Serves: 8 

  • 6 eggs
  • 250g dark chocolate
  • 100ml strong brewed coffee, cooled
  • 100g butter
  • 75g soft brown sugar
  • 40g flour
  • 50ml creme fraiche
  • 3 tablespoons cocoa powder
  • 50ml coffee liqueur (eg. Kahlua)
  • 1 tablespoon icing sugar
  • pinch of salt

  1. Preheat oven to 150 C / Gas mark 2 and grease a cake tin.
  2. Gently melt 150g chocolate in a bowl over a pan of boiling water along with the coffee.
  3. Roughly chop the butter, and add to the chocolate and coffee. Mix well and remove from heat.
  4. Separate egg whites and yolks, putting whites to one side. Beat yolks with sugar until white.
  5. Add melted chocolate mixture to eggs, and then the flour. Mix.
  6. Beat egg whites with a pinch of salt until stiff, then add to mixture.
  7. Pour mixture into tin and bake for 40 minutes.
  8. FOR THE ICING: Melt the rest of the chocolate (100g) oven a pan of boiling water. Remove from heat and pour in creme fraiche and coffee liqueur. Leave to cool, stirring from time to time.
  9. Gently take cake out of tin, then pour chocolate-coffee icing over. Chill for ten minutes, and then sprinkle with icing sugar and cocoa powder.
