Coconut and raisin scrummy traybake cake

    Makes: 12 large-ish slices

    • 300g self raising flour
    • 220g unsalted butter
    • 215g caster sugar
    • 120g desiccated coconut
    • 120g raisins, sultanas or currants
    • a few drops of vanilla extract
    • 3 large eggs

    Prep:15min  ›  Cook:25min  ›  Ready in:40min 

    1. Cream together the butter and sugar. Add the eggs and whisk. Sift the flour and fold into the mixture. Add the coconut, raisins and vanilla.
    2. Place into a LARGE-ISH greased roasting tin. Bake in the oven for around 20 mins until cooked throughout. Slice ito 12 pieces (or more/less). Enjoy!

    I hate recipes that do not tell you what size tin to use and would not waste my time making them. The people who put recipes on here must know what size tin they used! They don't even give the oven temperature!  -  22 Mar 2011
