About this recipe:An easy dish to prepare and doesn't take a long time to cook. Nice and light tasting, but also lots of flavour. Can be served with rice, or if you want to be more authentic (Italian inspired), serve with sauteed potatoes and a green vegetable.
1/2 unwaxed lemon - 3 strips of peel and the juice
1/2 glass dry white wine
2 tablespoons fresh flat leaf parsley, chopped
sea salt and fresh ground black pepper to taste
1/2 teaspoon granulated sugar

Use a large frying pan for this dish. Add the oil to the pan and heat through on a medium heat.
Cut the chicken breasts into small pieces and when the oil is hot, add to the pan. Fry for approximately 5 minutes, turning regularly.
Add the garlic, the strips of lemon peel and the lemon juice. Turn the heat down to low and cook for about 10 minutes.
Add the white wine, parsley, salt and pepper and sugar to the pan and cook for a further 10-15 minutes, until the sauce has reduced a little. The sauce should not be too thin, but also should not be think and gloopy! If it does get a little thick, add a drop more wine.
Serve this dish simply with either "risi e bisi" (rice with peas), plain bolied rice or with sauteed potatoes and a green vegetable. Also nice served in the summer with a crisp green salad and crusty bread.
This dish is easy, quick and very tasty! It's a great alternative to a cooked chicken dinner as it's very light and a healthy dish. Great for all the family, especially my 4 year old daughter who loves the chicken! I can't wait to make this dish again and i'm also going to try other variations with lime or orange. I didn't have parsley so used dried oregano, loved the flavour but half a glass of wine wasn't enough liquid (size of wine glass?) so could you add in ml please. I will make I again just with a lot more wine. - 24 Feb 2016
Used different ingredients.
I used honey instead of sugar, i didn't add chives, halved the amount of wine and also added mushrooms.
I then served it with new potatoes roasted with salt, black pepper and paprika, and a salad! - 18 May 2011
