Vegetarian Sweet and Sour Meatballs

    A wonderful vegetarian version of the sweet and sour meatballs my mother used to make. A more subtle version as my partner is not a big fan of the 'sweet & sour' flavour.

    Serves: 2 

    • 1 bag Quorn vegetarian meatballs
    • 1 large onion
    • 1 small red pepper
    • 1 carrot
    • 2 serves rcooked rice or asian noodles (your choice)
    • 1 tablespoon brown sugar
    • 2 tablespoons red wine vinegar
    • 1 tablespoon soy sauce
    • 1 tablespoon gin
    • 3 tablespoons tomato ketchup
    • 1 small tin pineapple pieces in juice
    • 1 tablespoon cornflour
    • 1 clove garlic

    1. Roughly chop onion, carrot and red pepper into julienne pieces up to 2.5 cm long.
    2. In a large fry pan cook meatballs and carrots for 5 minutes.
    3. Add onion, garlic and red pepper to frypan and cook until softened.
    4. In a small saucepan put sugar, gin, red wine vinegar, tomato ketchup, soy sauce and pineapple. stir thoroughly and heat on a low heat until slightly simmering.
    5. While vegetables and sauce are cooking, cook rice or noodles according to instructions on the packet.
    6. When sauce simmering, add cornflour (dissolved in a 2 tablespoons water) to sauce to thicken. allow to simmer slowly until thickened and then take off the heat.
    7. Add sauce to fry pan and stir through. Serve with the rice or noodles.
