Chocolate and ginger cookies

    A quick easy to make, delicious tasting cookie, with a dough that incorporates dark chocolate, studded with crystallised ginger bits.

    Makes: 15 biscuits

    • 115g unsalted butter
    • 50g caster sugar
    • 70g light brown soft sugar
    • 1/2 teaspoon vanilla extract
    • 1 large egg
    • 70g 70% cacao dark chocolate
    • 65g finely chopped crystallised ginger
    • 160g plain flour
    • 1/4 teaspoon bicarbonate of soda
    • 1 pinch salt

    1. Preheat the oven to 180 C / Gas 4. Grease 2 baking trays.
    2. Cream together butter and sugars until combined. Beat in the vanilla and the egg.
    3. Melt the chocolate in the microwave gently until smooth and runny and stir into the mixture, then add the chopped ginger.
    4. Mix together flour, bicarb and a pinch of salt and combine with the other ingredients until just mixed. Place heaped tablespoons onto baking tray, well spaced.
    5. Bake in oven for 9 to 11 minutes. Let sit for a couple of minutes on tray and move to a wire cooling rack.

    Quite disappointed in the texture, it was more like cake than biscuit or cookie. Also, not sure about the measurements. For instance could hardly taste the ginger crystals. Sorry to be so negative.  -  27 Apr 2014
