About this recipe: This is lovely, especially good for vegetarians! I use a ready made shop bought flan case, this saves a lot of 'time' and 'hassle'! lol!

Serves: 4 

  • 1 ready made flan case
  • 1 onion, sliced
  • 1 red pepper, sliced
  • 2 eggs, beaten
  • 150ml single cream
  • 60g cheese, grated
  • salt and pepper to season

Prep:10min  ›  Cook:35min  ›  Ready in:45min 

  1. Heat the oil in a frying pan and fry the onion until soft but not browned. Add the pepper and cook for 5 minutes, then spread the mixture into the flan case.
  2. Mix the eggs, cream and cheese together and season to taste with salt and pepper.
  3. Pour over the flan and bake in a preheated oven at 200 C / Gas 6 for 30 minutes until set and risen.
