About this recipe: A delicious main course which uses the main ingredient of chicken, and is also seasoned with parsley.

Serves: 4 

  • 4 Chicken fillets or chicken pieces
  • 2 oz Butter or Margarine
  • 1 1/2 oz Flour
  • 1 pint chicken stock
  • 1-2 yolks of eggs
  • 4 tbp Cream
  • Chopped Parsley

Prep:15min  ›  Cook:15min  ›  Extra time:5min cooling  ›  Ready in:35min 

  1. Cut the chicken and season.
  2. Melt butter in pan and.....
  3. ......Add chicken to colour.
  4. Mix in flour and cook out.
  5. Mix in the stock.
  6. Allow to simmer gently until cooked.
  7. Mix yolks and cream in a bowl.
  8. Pour a little boiling sauce unto the yolks and cream and mix well.
  9. Pour back into pan and mix thouroughly and do not reboil.

Serving suggestion

1.Serve with some pineapple chunks. 2.Correct the seasoning. 3. Serve sprinkled with chopped parsley.
