    About this recipe: A lovely combination of mince, macaroni and a luscious cheese sauce, this is pure comfort food! It's tasty and cheap to make too!

    Ingredients
    Serves: 4 

    • 225g (8 oz) macaroni
    • 1 to 2 tablespoons oil
    • 1 large onion, finely chopped
    • 1 to 2 cloves garlic, crushed
    • 2 carrots, diced
    • 450g (1 lb) minced beef
    • 150ml (5 fl oz) beef stock
    • 1 bay leaf
    • 1/2 teaspoon Worcestershire sauce
    • salt and pepper to taste
    • 1 teaspoon dried oregano
    • 4 tablespoons tomato ketchup
    • 25g (1 oz) butter or margarine
    • 25g (1 oz) flour
    • 300ml (1/2 pint) milk
    • 85g (3 oz) cheese, grated

    Method

    1. Cook the macaroni in plenty of boiling salted water for about 12 minutes, then drain.
    2. Meanwhile heat the oil and fry the onion, garlic and carrots until soft and lightly coloured. Add the mince and continue stirring for 5 minutes until the mince has browned.
    3. Add the stock, bay leaf, Worcestershire sauce and seasoning, cover and simmer for 15 to 20 minutes. Discard the bay leaf. Taste and adjust the seasonings and stir in the oregano. Add the tomato ketchup and stir.
    4. To make the sauce, melt the butter in a pan and stir in the flour. If not smooth enough add a little more butter! Gradually add the milk and bring to the boil, stirring continuously. Simmer for 3 minutes, season to taste and stir in one-third of the grated cheese until melted.
    5. In a lightly greased ovenproof dish layer up one-third of the cooked macaroni followed by half the meat and half the sauce. Continue with half the macaroni, remaining meat, remaining macaroni and finally the sauce. Sprinkle with the remaining cheese and cook in a moderately hot oven (200 C / Gas 6) for about 40 minutes until well browned.
    6. Leave it to rest for 15 minutes, this helps keep it together when dishing it out, then put back in the oven for 5 minutes to heat, then serve!

    Serving suggestion

    Serve with garlic bread.
