Black pudding stuffed chicken

    This is lovely, a nice change from the usual chicken stuffed with cheese. Something different - very impressive if having guests for dinner!

    Serves: 4 

    • 4 chicken breasts
    • 4 slices black pudding
    • salt and pepper to season
    • 8 rashers back bacon

    1. Preheat the oven to 200 C / Gas 6.
    2. Cut a pocket in each chicken breast and stuff each one with a slice of black pudding cut in half. Season with salt and pepper.
    3. Wrap each chicken breast tightly with 2 rashers of bacon. Place onto a baking tray and cook the the preheated oven for 30 minutes.

    Serving suggestion

    Serve with potatoes and veg.

    Quick, easy and delicious. I had black pudding and bacon left over from a Sunday breakfast, great way to use it up.  -  28 Jan 2018


    Delicious. I didn't use the bacon although I did serve with a creamy whisky and peppercorn sauce to add some moisture to the dish.  -  08 Jan 2017


    We thought it was a bit bland. If made again, we'd add a thin layer of English mustard between the chicken and black pudding before baking.  -  01 Jan 2017
