Blackberry spinach salad

    Serves: 8 

    • 1 (500g) bag baby leaf spinach, rinsed and dried
    • 280g (10 oz) fresh blackberries
    • 1 (200g) packet feta cheese, crumbled
    • 1 (250g) punnet cherry tomatoes, halved
    • 1 spring onion, sliced
    • 4 tablespoons finely chopped walnuts (optional)

    1. In a large bowl, toss together baby spinach leaves, blackberries, feta cheese, cherry tomatoes, spring onion and walnuts.

    This was an interesting dish and something nice to serve. My husband liked it very much. Used balsamic vinegar as a dressing.  -  07 Aug 2008


    We enjoyed this. As an experiment we also tried red raspberries, strawberries and also good. One note; add rest of salad things and toss and add berries last so they won't crumble. Thanks for sharing.  -  07 Aug 2008


    This salad was a huge hit at our family barbecue. The blackberries were hard to toss so next time I will add them last.  -  07 Aug 2008
