Pork with apples and sauerkraut

The sweetness of apples, brown sugar and juniper berries compliment the sauerkraut in this hearty all-in-one pork dish.

We loved this… kids and all! Two changes that we made: I smoked the pork chops with applewood and added them at the end (based on how I had seen it prepared at a local restaurant) and I also couldn't find juniper berries, but a shot of gin worked great as a substitute. Juniper flavor came through subtly. I am sure that the caraway versions that people made were good, but we really liked the bright, slightly piney notes. We will definitely put this in the cool weather rotation. Very rustic!
