    About this recipe: These beef skewers are marinated in a flavourful lemon grass marinade, and can be barbecued or grilled. A traditional Vietnamese dish, best if dipped in Nuaoc Cham sauce.

    Serves: 6 

    • 2 teaspoons caster sugar
    • 2 tablespoons soy sauce
    • 1 teaspoon ground black pepper
    • 2 cloves garlic, minced
    • 2 sticks lemon grass, minced
    • 2 teaspoons sesame seeds
    • 675g beef sirloin, thinly sliced
    • 6 skewers
    • 12 leaves romaine (cos) lettuce
    • 6 sprigs fresh coriander, to garnish
    • 6 sprigs fresh basil, to garnish
    • 6 sprigs fresh mint, to garnish
    • 2 thinly sliced spring onion, to garnish

    1. In a medium bowl, mix the sugar, soy sauce, pepper, garlic, lemon grass and sesame seeds. Place the meat in the dish and stir to coat. Cover and refrigerate for 4 hours.
    2. Preheat barbecue for high heat. Discard marinade and thread meat onto skewers accordion style.
    3. Brush cooking grate with oil, and discard marinade. Arrange skewers on the barbecue. Cook 5 minutes per side. Serve hot on skewers, or remove from skewers and serve on lettuce leaves. Garnish with coriander, mint, basil and sliced spring onions.
