Caribbean Grilled Yellowtail Snapper

About this recipe: This snapper is marinated in a spicy citrus marinade, then grilled or barbecued. Delicious!

Serves: 4 

  • 900g yellowtail snapper fillets
  • Marinade
  • 250ml water
  • 2 tablespoons lime juice
  • 1 tablespoon lemon juice
  • 2 teaspoons lemon zest
  • 1/4 teaspoon orange extract
  • 2 jalapeno or green chillies, finely minced
  • 1 shallot, minced
  • 1 tablespoon fresh thyme
  • 2 teaspoons ground allspice
  • 1 teaspoon cinnamon
  • 1 tablespoon soy sauce
  • salt and pepper to taste

  1. In a large shallow dish, add all of the marinade ingredients. Mix well.
  2. Add the snapper and turn to coat. Cover and chill in the fridge for 30 minutes to an hour.
  3. Grill or barbecue fish over very high heat for about 5 minutes. Carefully turn and cook another 2-3 minutes, until desired doneness.
