    About this recipe: For those who love salmon, here's a new and easy way to prepare a delicious dish. This is richly flavoured with the salmon and parmesan cheese, as well as pesto. Simple and easy!

    Serves: 4 

    • 250g uncooked spaghetti
    • 1 1/2 tablespoons olive oil
    • 1 large onion, chopped
    • 3 spring onions, finely chopped
    • 2 tablespoons prepared basil pesto
    • 2 (180g) tins salmon, drained and flaked
    • 50g grated Parmesan cheese

    1. Bring a large pot of lightly salted water to the boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
    2. Heat olive oil in a frying pan over medium heat. Stir in the onions, spring onions and pesto. Cook until tender. Mix in salmon and cook until heated through. Stir in 1/2 of the Parmesan cheese, and continue cooking 5 minutes. Toss with the cooked pasta, then sprinkle with remaining Parmesan cheese to serve.
