About this recipe: This is the easiest chocolate chip cheesecake recipe you will come by! The chocolate gorgeousness comes from both the chocolate biscuit base and from the specks of chocolate chips throughout the cheesecake. Use plain finely chopped chocolate instead of chips, if desired.


Serves: 8 

  • 200g chocolate digestive biscuits, crushed
  • 110g melted butter
  • 2 tablespoons caster sugar
  • 450g cream cheese, softened
  • 110g dark brown soft sugar
  • 2 eggs
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 170g plain chocolate chips

  1. Preheat oven to 180 C / Gas 4. Mix biscuit crumbs, melted butter and sugar. Press into the bottom and sides of a 23cm pie dish. Refrigerate base while making filling.
  2. In a large bowl, beat cream cheese and dark brown soft sugar until smooth. Beat in the eggs and egg yolk. Stir in vanilla. Fold in the chocolate chips. Pour filling over biscuit base.
  3. Bake in the preheated oven for 50 minutes, or until filling is set.
