Chocolate dipped chocolate biscuits

    This is a gorgeous chocolate biscuit recipe, with an extra chocolaty touch - the finished biscuits are dipped in plain chocolate just halfway to make a spectacularly professional-looking biscuit!

    Ingredients
    Serves: 30 

    • 55g cooking chocolate
    • 110g margarine
    • 110g butter
    • 100g caster sugar
    • 110g dark brown soft sugar
    • 1 tablespoon instant coffee granules
    • 1 teaspoon water
    • 1 egg
    • 250g plain flour
    • 1 teaspoon ground cinnamon
    • 1/4 teaspoon salt
    • 250g plain chocolate
    • 3 tablespoons margarine

    Method

    1. Melt cooking chocolate in a heavy saucepan. Cool slightly.
    2. In a large bowl beat 110g margarine and butter with an electric mixer on medium speed until butter is softened. Add the sugar and dark brown soft sugar and beat until fluffy.
    3. Dissolve the instant coffee in the water. Add the melted chocolate, egg and coffee to the butter mixture and beat well.
    4. Stir flour, cinnamon and salt together and add to the butter mixture. Cover and chill about 1 hour or until easy to handle.
    5. Shape into two 18cm long logs. Wrap in cling film and chill for at least 6 hours or overnight.
    6. Preheat oven to 180 C / Gas 4.
    7. Cut into 6mm slices and place on an ungreased baking tray. Bake for 10-12 minutes. Remove to a wire rack and cool.
    8. Melt the plain chocolate and 3 tablespoons of margarine over low heat. Dip half of each biscuit into the chocolate mixture. Place on greaseproof paper until the chocolate is set.

    I made these cookies for my niece who is in college. Here is what she said: (also, my husband loved the chocolate, coffee taste) Dear Auntie, I got cookies today! And they're so yummy---thanks a bunch! What kind are they? They're very different...I've never had anything like them, but boy are they addictive. Yum. They're sort of coffee/cinnamon-ish.     Can't comment on the cookies, just the chocolate dip. It was perfect for shortbread cookies; I dipped it in the chocolate then rolled them in toasted pecans. A hint if you don't have chips: 1/2 cup morsels is about 3 oz of baking squares. 3oz and 1 Tbsp was enough for 1 dozen medium sized cookies.
