    About this recipe: This sorbet recipe is a perfect ending for an exotic meal. Divinely refreshing, and sweet without being heavy. This will become a summertime staple in your home, I am sure of it!

    Ingredients
    Serves: 4 

    • 1 (400ml) tin cream of coconut
    • 125ml fresh lime juice
    • 175ml water

    Method
    Prep:5min  ›  Extra time:30min freezing  ›  Ready in:35min 

    1. Combine the cream of coconut, lime juice and water in the container of an ice cream maker. Freeze according to manufacturer's instructions.

    The flavour was quite nice at first, but it does finish slightly soapy. The oil in the coconut also congeals during freezing and leaves little fatty particles that are a tiny bit unpleasant. Even so, for ease, this recipe deserves five stars. Also, I found it hard to stop eating. If you can maintain the initial flavour for a bit by eating more of it, it's very satisfying. And the lingering lime taste afterward is very pleasant. - 04 Apr 2015
