About this recipe:Coquito is a very traditional Puerto Rican drink, akin to eggnog that you find in the States. I am from St. Croix and we enjoy this with our own Cruzan Rum. A lovely drink for the festive season!
6 egg yolks
1/2 teaspoon ground cinnamon
4 tablespoons vanilla extract
300ml coconut milk
1 (400ml) tin coconut cream
1 (397g) tin condensed sweetened milk
1.7L evaporated milk
1L light rum

In a medium bowl, whisk egg yolks until smooth. Whisk in cinnamon and vanilla Stir in coconut milk, coconut cream, condensed sweetened milk, evaporated milk and rum. Taste and adjust cinnamon and vanilla if desired. Blend well and strain through a fine sieve or muslin. Pour into clean bottles. Serve chilled.
