Curried Baked Salmon

    Just three simple ingredients result in deliciously moist salmon fillets with unbelievable flavour! Also delicious if you'd prefer to use tuna or a firm white fish such as halibut or snapper.

    Serves: 4 

    • 250ml soured cream
    • 1 teaspoon curry paste
    • 4 (170g) fillets salmon

    Prep:3min  ›  Cook:25min  ›  Ready in:28min 

    1. Preheat oven to 170 C / Gas 3. Lightly oil a baking tray.
    2. In a bowl, mix the soured cream and curry paste. Spread the bottom of each salmon fillet with 1 tablespoon soured cream mixture, and arrange the fillets on the prepared baking tray. Top fillets with remaining soured cream mixture.
    3. Bake 25 minutes in the preheated oven, or until the salmon flakes easily with a fork.

    My husband and I love this recipe. For two salmon pieces, I use 1/2 cup sour cream AT LEAST 1 1/2 tsp of curry powder and I add maybe 1/8 tsp of coriander to add a zing.     This recipe is wonderful. I add a lot more curry powder than it calls for (approx. a quarter cup) and I add some garlic powder to the mix.
