Spicy BBQ oysters

    This is a deliciously different way to serve oysters. The spicy butter mixture is fabulous. For safety, use leather gloves when shucking hot oysters. Sounds like a lot of trouble, but well worth the work.

    Serves: 6 

    • 225g butter, softened
    • 2 tablespoons chopped fresh coriander
    • 3 tablespoons minced garlic
    • 2 tablespoons minced shallot
    • 2 tablespoons lime juice
    • 3 tablespoons chilli-garlic sauce (such as Sriracha)
    • 12 fresh oysters in shells
    • 2 tablespoons lime juice

    1. In a medium bowl, stir together the butter, coriander, garlic, shallot, 2 tablespoons of lime juice and hot sauce. Spoon onto greaseproof paper and roll into a log. Place into the freezer until set.
    2. Preheat a barbecue for high heat.
    3. Place whole oysters on the hot barbecue for 3 to 5 minutes, or until almost done. Remove the top shell from the oysters, without spilling any liqueur, and return them to the barbecue. Slice the butter log into 5mm slices, and place a slice on top of each oyster. Barbecue until the butter melts, then serve on a bed of rock salt for presentation.

    Great for Oysters. Maybe a little too much garlic and in general I think the recipe makes too much butter for the amount of shellfish. The flavor is good, but I tried it on clams too and was not a fan. Probably more because clams taste too fishy too me.  -  22 Jun 2009  (Review from Allrecipes US | Canada)
