About this recipe: In this easy tilapia recipe, tilapia fillets are simply prepared with white wine, garlic, fresh basil and tomato, then wrapped in a parcel and cooked on the barbecue for a mere 15 minutes. Quick and easy! You can also cook the parcel in a hot oven if it's not barbecue season!


Serves: 4 

  • 4 (110g) tilapia fillets
  • salt and pepper to taste
  • 4 tablespoons butter
  • 3 cloves garlic, pressed
  • 4 fresh basil leaves, chopped
  • 1 large tomato, chopped
  • 250ml white wine

  1. Preheat a BBQ for medium-high heat.
  2. Place the tilapia fillets side by side on a large piece of aluminium foil. Season each one with salt and pepper. Place one tablespoon of butter on top of each piece of fish, and sprinkle with garlic, basil and tomato. Pour the wine over everything. Fold foil up around fish, and seal into a parcel. Place parcel on a baking tray for ease in transportation to and from the barbecue.
  3. Place foil parcel on the preheated barbecue, and cook for 15 minutes, or until fish flakes easily with a fork. Open the parcel carefully so as not to get burned from the steam, and serve.
