About this recipe:This is a great summer pasta recipe. The sauce is not cooked, so all you have to do is boil the pasta, then combine with a fresh tasting array of herbs, olives, tomato and feta cheese.
450g fresh fettuccine pasta
5 ripe tomatoes, chopped
1/2 small red onion, chopped
45g chopped fresh basil
70g pitted Kalamata olives, chopped
freshly ground black pepper to taste
2 tablespoons extra virgin olive oil
150g crumbled feta cheese

Bring a large pot of lightly salted water to the boil. Add fettuccine and cook for 8 to 10 minutes or until al dente; drain.
In a medium bowl combine tomatoes, onion, basil, olives and black pepper.
Toss the fettuccine with olive oil. Serve pasta topped with tomato mixture and feta cheese.
