Bulghur and Dried Fruit Pilaf

Very basic yet tasty side that goes well with roast chicken or kebabs. Any type of dried fruit can be used, such as sultanas or dried apricots, but I prefer cranberries.

Ingredients

225ml (8 fl oz) water
8 tablespoons bulghur wheat
1 chicken stock cube
1 knob butter
30g (1 oz) dried cranberries

Preparation method

1. Bring water to a boil in a pot, and mix in bulghur, stock cube and butter. Cover pot, reduce heat to low, and simmer 15 minutes.
2. Fluff cooked bulghur with a fork, and gently mix in the dried cranberries.

Tip:

Easily make this into a vegetarian dish by using vegetable stock instead of chicken stock.
