Greek Cos Salad

    If you love spending summer hols on the Greek Islands with a good Greek salad, you'll love this recipe. It is true to the original, but with the addition of cos lettuce for added substance and crunch. A meal in itself!

    Ingredients
    Serves: 6 

    • 1 cos lettuce - rinsed, dried and chopped
    • 1 red onion, thinly sliced
    • 125g pitted black olives
    • 1 green pepper, chopped
    • 1 red pepper, chopped
    • 2 large tomatoes, chopped
    • 1 cucumber, sliced
    • 150g crumbled feta cheese
    • 6 tablespoons olive oil
    • 1 teaspoon dried oregano
    • 1 lemon, juiced
    • ground black pepper to taste

    Method

    1. In a large salad bowl, combine the lettue, onion, olives, peppers, tomatoes, cucumber and feta cheese.
    2. Whisk together the olive oil, oregano, lemon juice and black pepper. Pour dressing over salad, toss and serve.

    I just made this salad and it was great!. My husband and I loved it. But.....I did change a few things. First of all I did use all of the Olive Oil plus I added 3 T. of Red Wine Vinegar, garlic powder and 3T of sugar. Once I added the sugar that was La Difference! Viva! It made all the difference in the world. The dressing was so good that you could have lapped up the remaining dressing in the bottom of the bowel with some warm buttered French or Italian Bread and made a meal on that alone!     LOVED this salad! Tastes like the ones served at the restaurants! I reduced the olive oil by 1 TBLS and in its place, I used a TBLS of red wine vinegar! It does get soggy pretty fast so do not pour the dressing over the salad until your just ready to serve. Still, will make again!  -  09 Nov 2002  (Review from Allrecipes US | Canada)
