Filipino green bean and bottle gourd stew

    This is a Filipino one-pot meal that is full of flavour. The coconut milk base is delicious combined with pork, prawns and veggies. Look for bottle gourd in Asian or African markets. Other names are lau and calabash. Prawn paste or shrimp paste can be found in Chinese shops. Enjoy!

    • 450ml light coconut milk
    • 2 tablespoons prawn paste
    • 1 onion, chopped
    • 1 (5cm) piece fresh root ginger, peeled and sliced
    • 225g pork, cut into bite-sized pieces
    • 225g peeled and deveined prawns
    • 450g fresh fine green beans, trimmed and cut into 5cm pieces
    • 1 (450g) bottle gourd, peeled and cut into cubes
    • 1 green chilli, halved lengthways
    • 250ml coconut cream

    1. Whisk the light coconut milk and prawn paste together in a bowl. Pour into a large pot with the onion, ginger and pork; bring the mixture to the boil for 5 minutes.
    2. Add the prawns; reduce heat to medium, cover, and cook another 2 minutes. Add the green beans, bottle gourd and green chilli; cover again and continue cooking until the mixture is nearly dry, about 10 minutes.
    3. Stir the coconut cream into the mixture and continue cooking until nearly all the moisture is absorbed, about 5 minutes. Serve hot.
