    About this recipe: Salmon is topped with a flavourful combination of hazelnuts, tarragon and orange zest, then baked to perfection. This sounds like a fancy recipe, but is fantastically easy. Your family will love it, but it's good enough for dinner parties, too.

    Ingredients
    Serves: 4 

    • 450g salmon fillet, cut into 4 pieces
    • 8 tablespoons light mayonnaise
    • 8 tablespoons chopped hazelnuts
    • 2 teaspoons minced fresh tarragon
    • 1/2 teaspoon orange zest
    • 1/2 teaspoon salt
    • 1/8 teaspoon ground black pepper

    Method
    Prep:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Preheat oven to 200 C / Gas 6. Lightly coat a baking tray with oil.
    2. Arrange salmon on the baking tray and spread with equal amounts mayonnaise. Top with hazelnuts and sprinkle with tarragon, orange zest, salt and pepper.
    3. Bake 15 minutes in the preheated oven, or until fish flakes easily with a fork.

    Just did this as a single portion for myself and it was tasty, however I think the mayonnaise was to thick and overpowered the rest of the dish. I will do it again but with much less mayonnaise.  -  08 Feb 2014

    We loved this ! It gets high marks for simple, fresh taste - doesn't cover the flavor of the salmon - and it's a breeze to prepare. I added a little Orange juice to the mayo and tarragon and mixed it up before I spread it onto the fish. I served fresh asparagus sauted in butter and some crusty dinner rolls. NO LEFT OVERS !     I have made this many times to rave reviews. Easy, looks lovely on the plate. I mixed in a Tbsp or so of orange juice to the mayo mixture. Also used a pinch of dried tarragon as I did not have fresh, worked out fine. Think I might try crushed macadamia nuts next time.
