About this recipe:This is a wonderful cake, perfect for birthdays and special occasions. The three layers sound daunting, but it's surprisingly easy to make! The cake is flavoured with walnuts and coconut and iced with a cream cheese buttercream. You can use your favourite nut in place of the walnuts, if desired. Enjoy!
5 egg yolks
400g caster sugar
250g plain flour
1 teaspoon bicarbonate of soda
125g chopped walnuts
75g desiccated coconut
5 egg whites
225g cream cheese
425g icing sugar
1 teaspoon vanilla extract
4 tablespoons chopped walnuts

Cream together 225g butter or margarine, egg yolks and 400g caster sugar. Alternately mix in flour and buttermilk. Add bicarb of soda. Mix in 125g walnuts and coconut.
Beat egg whites, and fold into cake mixture. Pour mixture into three greased and floured 23cm round cake tins.
Bake for 20 to 25 minutes in a preheated 180 C / Gas 4 oven.
Combine cream cheese, 110g butter or margarine, icing sugar and vanilla extract. Spread onto cooled cake. Top iced cake with chopped walnuts.
