Jambo (Dutch Antilles Soup)

    This is a Caribbean soup that originates from the Dutch Antilles. It features fresh okra, salt beef, cod and prawns for a fantastically unique combination of flavours and textures.

    Serves: 4 

    • 170g salt beef, fat removed and diced
    • 2.8L water
    • salt and pepper to taste
    • 300g fresh okra, cut into 1cm slices
    • 125g medium prawns, peeled and deveined
    • 225g cod fillets, cubed
    • 4 tablespoons chopped fresh basil
    • 1 tablespoon lemon juice, to taste

    1. Soak diced salt beef in ample cool water overnight to remove the salt. Drain, rinse and set aside.
    2. Bring water to the boil over high heat. Add salt and pepper to taste, then add okra. Reduce heat to medium, and simmer for 20 minutes. Stir in beef, prawns and cod; simmer fro 10 minutes more. Season with chopped basil and lemon juice before serving.

    Added a large can of stewed tomatoes. Reduced water by 4 cups, and added a regular bag of instant brown rice at the end (last 10 minutes). Really good stuff.
