Colcannon with ham

    The traditional Irish colcannon recipe with a twist. A delicious and creamy dish made from mashed potatoes, cabbage and cubed ham. It's a simple, yet tasty dish for any day of the week.

    Ingredients
    Serves: 12 

    • 5 pounds Maris Piper potatoes, peeled and cubed
    • 900g cabbage, chopped
    • 3 tablespoons mayonnaise or more if needed
    • 420ml chicken stock or as needed
    • salt and black pepper to taste
    • 900g fully cooked ham, cubed

    Method

    1. Place the potatoes into a large saucepan and cover with salted water. Bring to the boil, then reduce heat to medium-low, cover and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two.
    2. While potatoes are boiling, place cabbage into a saucepan with about 2.5cm of water, bring to the boil, cover and simmer the cabbage until tender, 10 to 15 minutes. Drain the cabbage and set aside.
    3. In a large bowl, mash the potatoes and mayonnaise together, adding chicken stock by the tablespoon until you reach your desired consistency. Season the mashed potatoes with salt and pepper. Stir the cabbage into the mashed potatoes.
    4. Place the cooked ham into a frying pan over medium-low heat and cook and stir until the ham is hot, about 3 minutes. Stir the cooked ham into the colcannon and serve.

    This was very yummy! I halved the recipe since it was just for me and my husband, sauteed a small minced onion with the cabbage, and tossed in two crushed chicken bouillon cubes while the cabbage cooked down. It added great flavor. After I tossed everything together, I mixed in a beaten egg, put it all in a casserole pan, and baked it for about 45 minutes at 350 degrees, putting cheese all over the top for the last 10 minutes. Yum! Can't wait to make it again. Oh yeah, I used light mayo instead of regular, and boiled the potatoes with 3 crushed garlic cloves which I forgot to take our when I whipped up the taters.
