Cinnamon Spiced Pizzelles

    An Italian waffle biscuit spiced with cinnamon - truly delicious. You will need a pizzelle iron to make these biscuits. Serve on their own, as a snack, with ice cream or with a cup of tea or coffee.

    Makes: 9 dozen

    • 9 eggs
    • 500g caster sugar
    • 4 teaspoons ground cinnamon
    • 3 tablespoons baking powder
    • 340g unsalted butter
    • 625g plain flour

    1. In a large bowl, beat eggs, butter and sugar together. Stir in the flour, baking powder and cinnamon to form a sticky dough.
    2. Preheat the pizzelle iron. Drop dough by rounded teaspoonfuls onto the hot iron close the lid and cook for 1 to 2 minutes. Steam will stop coming out of the iron. Place pizzelles on a wire rack to cool.
