About this recipe:This simple German recipe creates a delicious honey flavoured cookie, with all the honey goodness. They are soft, sweet and moreish. If you like your cookies a little firmer, allow them to bake for 1 or 2 minutes more.
Makes: 4 dozen
200g caster sugar
1 teaspoon vanilla extract
1 teaspoon bicarbonate of soda
500g plain flour
1 teaspoon ground ginger

In a saucepan over low heat, melt together sugar, margarine and honey. Let cool.
Mix together eggs, vanilla, bicarbonate of soda and ginger. Gradually add to cooled honey mixture.
Slowly add 500g to mixture. Stir until well blended. Drop by teaspoonfuls onto baking trays about 5cm apart. Bake at 180 C / Gas 4 until golden, about 12-15 minutes.
This recipe was a total disaster, not only did I waste a whole jar of honey, but I now will have to spend hours cleaning my oven as the mixture completely overflowed all over the sides of the tray. On the up-side; the mixture itself tasted devine! - 31 Jul 2012
I changed some of the ingredients by adding some lemon juice, oats and more honey, but the result was really good. However, the actual dough was initially very runny and had to almost double the amount of flour - is it normal for it to be that runny or was I mistaken in thinking it should be stiffer? nice recipe, makes nice simple cookies and will make up a range of sizes with no need for cooking time alterations. This will make up one gigantic batch so make sure you have plenty of storage room - I ran out of tupperwares!
