Blue Cheese Walnut Pasta

    A super-quick meal that takes only 15 minutes to make. This pasta dish takes advantage of the wonderful marriage of walnuts and blue cheese. Spaghetti is topped with sauteed garlic, walnuts and blue cheese. Perfecto!

    Serves: 2 

    • 4 tablespoons coarsely chopped walnuts
    • 115g blue cheese, crumbled
    • 2 tablespoons olive oil
    • 225g uncooked spaghetti
    • 1 clove garlic, finely chopped

    1. Cook pasta in a large saucepan of boiling water until al dente.
    2. Meanwhile, heat oil in heavy frying pan. Add garlic and saute for a few minutes. Stir in walnuts and saute for several more minutes.
    3. Drain pasta and divide onto 2-4 plates. Top with garlic, walnuts and blue cheese.
