Perfect Pina Colada Sorbet

    If you like pina colada and getting caught in the rain... you'll enjoy this sorbet! It's sweet, refreshing, yet creamy at the same time. A delicious dessert to serve during the summer.

    Serves: 8 

    • 300g caster sugar
    • 350ml water
    • 1 (567g) tin pineapple slices, drained
    • 1 (400ml) tin coconut milk
    • 4 tablespoons lime juice

    Prep:3hr20min  ›  Extra time:1hr freezing  ›  Ready in:4hr20min 

    1. Make a syrup by bringing the sugar and water to the boil in a small saucepan over high heat, stir and boil until the liquid becomes clear, about 1 minute. Set aside to cool.
    2. Blend the pineapple in a liquidiser or food processor until very smooth and frothy. In a large bowl, whisk together the syrup, pineapple puree, coconut milk and lime juice. Refrigerate until chilled, about 3 hours.
    3. Freeze in an ice cream maker according to the manufacturer's directions.

    This was also the first use of my ice cream freezer. I used Splenda? in place of the sugar, fresh pineapple, lime and a light coconut milk. Mother in law is a diabetic and I was trying to make something she could enjoy with the rest of us on the 4th of July. Sorry for all the changes but are they changes or substitutions. Fresh for caned and lite for regular.
