    About this recipe: If you like pina colada and getting caught in the rain... you'll enjoy this sorbet! It's sweet, refreshing, yet creamy at the same time. A delicious dessert to serve during the summer.

    Serves: 8 

    • 300g caster sugar
    • 350ml water
    • 1 (567g) tin pineapple slices, drained
    • 1 (400ml) tin coconut milk
    • 4 tablespoons lime juice

    1. Make a syrup by bringing the sugar and water to the boil in a small saucepan over high heat, stir and boil until the liquid becomes clear, about 1 minute. Set aside to cool.
    2. Blend the pineapple in a liquidiser or food processor until very smooth and frothy. In a large bowl, whisk together the syrup, pineapple puree, coconut milk and lime juice. Refrigerate until chilled, about 3 hours.
    3. Freeze in an ice cream maker according to the manufacturer's directions.
