About this recipe: A meatless lasagne recipe, which is made by layering lasagne sheets with creamy mashed potatoes, then topped with sauteed onions and baked. Serve with a side of vegetables.


Serves: 6 

  • 9 lasagne sheets
  • 1 onion, sliced
  • 115g butter
  • 130g dry potato flakes or instant mash
  • 225g cream cheese

  1. Preheat oven to 180 C / Gas 4.
  2. In a large frying pan over medium heat, combine the onions with the butter and saute for 5 minutes.
  3. Prepare the instant mashed potatoes according to package directions, but omit the milk. Stir in the cream cheese until well blended.
  4. Place 3 lasagne sheets in the bottom of a lightly greased 23x33cm or similar sized baking dish. Spread 1/2 the potato mixture over the lasagne sheets in the dish. Top this with 3 more lasagne sheets, followed by the remaining potato mixture. Finish by topping with the remaining lasagne sheets, then top with sauteed onions.
  5. Bake at 180 C / Gas 4 for 20 minutes or until bubbly. Allow to cool for 5 minutes before cutting.
