Sweet potato and pork chop bake

    This is a really simple one pan dish. It involves baking pork chops, onions, sweet potatoes, apples, sugar and seasonings together. Feel free to add additional herbs and spices of your choice.

    Serves: 4 

    • 4 pork chops
    • salt and pepper to taste
    • 2 onions, sliced into rings
    • 2 sweet potatoes, sliced
    • 2 apples, peeled, cored and sliced into rings
    • 3 tablespoons dark brown soft sugar
    • 2 teaspoons freshly ground black pepper
    • 1 teaspoon salt

    1. Preheat oven to 190 C / Gas 5.
    2. Season pork chops with salt and pepper and arrange in a medium oven-safe frying pan. Top pork chops with onions, sweet potatoes and apples. Sprinkle with dark brown soft sugar. Season with 2 teaspoons pepper and 1 teaspoon salt.
    3. Cover and bake 1 hour in the preheated oven, until sweet potatoes are tender and pork chops have reached an internal temperature of 70 degrees C.

    My husband loved this. I added a little less pepper , put the seasoning in flour to cover chops and browned then put in dish with 1/4 cup of water and layered with onion sweet potato and apple turned out fab and juicy  -  22 Aug 2010

    I didn't see that anyone else had suggested this, but I did this recipe in my slow-cooker. I put the sweet potatoes on the botom, since they take the longest. Then I put a layer of onions and apples, then the chops, then another layer of onion and apples. On each layer i lightly dusted with salt and pepper and then sprinkled with a brown sugar/cinnamon/nutmeg mix - probably used double-triple the amt of brown sugar called for. I cooked it on medium for about 5 1/2 hours. It turned out GREAT. The pork really soaked in the flavor since it was sandwiched between the onion and apples(used golden delicious, by the way, sliced thick, and the texture was perfect).
