Portuguese Chorizo Stew

    An authentic Portuguese recipe for chorizo stew. Chorizo is simmered together with passata, potatoes and green beans. This dish is highly flavoured and can be enjoyed any day of the week.

    Makes: 6 

    • 450g chorizo sausage, skinned, cut into small pieces
    • 1 small onion, chopped
    • 1 clove garlic, chopped
    • 425g passata
    • 1.5 litres water
    • 2 small potatoes, diced
    • 2 teaspoons crushed chillies
    • 1 dash paprika
    • 2 (400g) tins cut green beans, drained

    1. Heat a heavy-based saucepan over medium-high heat. Saute chorizo, onion and garlic until onion is tender. Stir in passata, water and potatoes. Season with crushed chillies and paprika. Bring to the boil, reduce heat and simmer 25 to 30 minutes or until potatoes are tender. Stir in green beans and simmer 5 to 10 minutes or until heated through.

    I used only one chorizo ring, a lot more potatoes and only 900ml of water. It was lovely.  -  24 Jan 2015


    My husband is from Fall River, MA (high Portuguese population) and we've been searching for soups and stews for him to take to work. He is a very picky eater and he LOVES this. "A keeper" he said. I am not fond of canned veggies, so I used fresh green beans added at the 20 minute mark, then cooked for another 20 minutes and it came out wonderful.
