750ml cold water, or as needed

Heat the oil in a large frying pan. Place the plantains in the oil and fry on both sides till a dark golden brown, 3 to 4 minutes per side.
Remove the plantains from the pan and flatten each slice by placing a bowl or dish over the fried plantains and pressing down.
Dip the plantains in water, then return them to the hot oil and fry 1 minute on each side. Salt to taste and serve immediately.
If your local supermarket doesn't stock them, you'll find them in Indian or Caribbean shops.
