    About this recipe: Popular in many Latin American countries, fried green plantains make an utterly delicious side dish or snack. Known by many names, such as patacones or tostones, green plantains are sliced and fried till golden, for a crispy outside and tender interior.

    Serves: 2 

    • 5 tablespoons oil for frying
    • 1 plantain, peeled and sliced
    • 750ml cold water, or as needed
    • salt to taste

    1. Heat the oil in a large frying pan. Place the plantains in the oil and fry on both sides till a dark golden brown, 3 to 4 minutes per side.
    2. Remove the plantains from the pan and flatten each slice by placing a bowl or dish over the fried plantains and pressing down.
    3. Dip the plantains in water, then return them to the hot oil and fry 1 minute on each side. Salt to taste and serve immediately.

    Fresh plantains

    If your local supermarket doesn't stock them, you'll find them in Indian or Caribbean shops.
