Portuguese Cupcakes (Queijadas)

    An authentic and easy recipe for Portuguese cupcakes. They are absolutely delicious, especially warm out of the oven. Try serving them with fresh fruit or coconut on top.

    Serves: 18 

    • 3 eggs
    • 400g caster sugar
    • 45g unsalted butter
    • 100g plain flour
    • 475ml milk
    • 1/2 teaspoon vanilla extract

    Prep:10min  ›  Cook:45min  ›  Ready in:55min 

    1. Preheat oven to 170 C / Gas 3.
    2. In a liquidiser, combine eggs, sugar and butter. Blend until smooth. Pour in flour and milk, a little at a time, blending until smooth again. Stir in vanilla.
    3. Pour into muffin tins, filling 3/4 full. Bake in preheated oven 45 minutes, until golden brown. Serve hot or cold.

    These are absolutely delicious!! I lived in Portugal for a little over a year and ate them in about 1000 different cafes, and this recipe is so authentic! Just FYI, they are supposed to fall a bit in the middle - that is what makes them so perfect for different toppings.     I just can't understand the negative reviews for these. I used a nonstick muffin pan to make them and had no problems with sticking. I also tried almond extract instead of vanilla. I can't stop eating them...delicious!!  -  06 May 2002  (Review from Allrecipes US | Canada)
