About this recipe: Biscuit dough is lightly fragranced with ground cardamom and lemon extract, before being shaped and rolled in sesame seeds and baked. These biscuits are delicious with a cup of tea or coffee.


Makes: 60 biscuits

  • 500g plain flour
  • 200g caster sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cardamom
  • 200g margarine
  • 2 eggs, lightly beaten
  • 1 teaspoon lemon extract
  • 125ml milk
  • 110g sesame seeds

  1. Preheat oven to 190 C / Gas 5. Grease baking tray.
  2. Sieve together flour, sugar, baking powder, salt and cardamom in a large bowl. Cut margarine in knives until the size of small peas.
  3. Stir in eggs and lemon extract. Stir in milk, one tablespoon at a time, mixing after each addition.
  4. Mix everything together thoroughly. Break dough off in small pieces and roll into 3.75cm long logs. Flatten slightly and roll in sesame seeds.
  5. Place on baking tray 2cm apart. Bake for 12-15 minutes or until lightly browned.
