Sago Pudding

    Sago is soaked in milk, before being cooked with sugar, breadcrumbs, butter and lemon zest to create a delicious pudding. Serve hot or cold with a few strips of lemon zest on top.

    Serves: 4 

    • 3 tablespoons pearl sago
    • 250ml milk
    • 100g caster sugar
    • 1 teaspoon bicarbonate of soda
    • 110g dry breadcrumbs
    • 30g unsalted butter, melted
    • 1 tablespoon lemon zest strips

    1. Stir together sago and milk and let rest 8 hours or overnight in the refrigerator.
    2. In a bowl, combined soaked sago, sugar, bicarbonate of soda, breadcrumbs and butter. Stir well. Pour into a pudding mould or other heatproof bowl with the lemon zest and seal tightly.
    3. Bring a large saucepan of water to the boil. Place the pudding on a rack, submerged in the water and boil for 2 1/2 hours, topping off the water as necessary. Serve hot or cold.

    i changed a few items like instead of bread crumbs i used stale doughnuts, and i mixed butter, sugar and panko crumbs for the top. A basic plum recipie that i was looking for.  -  09 Oct 2009  (Review from Allrecipes US | Canada)
