About this recipe: Salmon is blended with cream cheese, onion, horseradish and lemon juice, rolled into a ball and then coated in freshly chopped parsley. Serve with crostini, crackers or crusty bread.


Makes: 1 ball

  • 225g cream cheese, softened
  • 1 tablespoon finely chopped onion
  • 1 teaspoon horseradish
  • 1/4 teaspoon salt
  • 1 tablespoon lemon juice
  • 1 (418g) tin salmon, drained and flaked
  • 1 bunch parsley, chopped

  1. In a medium bowl, thoroughly mix cream cheese, onion, horseradish, salt and lemon juice. Mix in the salmon, distributing it evenly throughout. Form mixture into a ball and roll in the parsley. Wrap in cling film and chill in the refrigerator until serving.
