Strawberry Thumbprint Cookies

    A sweet and and buttery cookie dough is rolled into a ball, then indented before being filled with strawberry jam. Serve with a cup of tea or coffee. Feel free to experiment with different flavours of jam.

    Makes: 18 cookies

    • 250g plain flour
    • 225g unsalted butter, softened
    • 120g icing sugar
    • 1 egg
    • 1 teaspoon vanilla extract
    • 4 tablespoons strawberry jam

    1. Mix together flour, icing sugar, butter, egg and vanilla.
    2. Shape dough with your hands to 3.75cm balls and place on greased baking trays. Press your finger in the middle and fill each hole with jam.
    3. Bake at 180 C / Gas 4 for 12 minutes or until the bottoms are lightly browned.

    These are delicious biscuits..however, I found that the 'dough' was far too sticky with the amount of flour specified so I kept adding more till I was satisfied. They turned out great, light and buttery with a distinct vanilla taste. I'll definitely be making these again!  -  26 Dec 2010


    I'm so glad other reviews say it was too sticky, because I was worrying that it was just me!! I added more flower to make them less sticky and it worked fine. They turned out really nice, but next time I'll make mine a lot smaller. These will be used as Christmas presents  -  23 Nov 2014


    I too found the mixture very sticky so I added extra plain flour until it was easy to handle. Very easy recipe to do! Taste yummy, didn't last five minutes in my house  -  26 Feb 2011
