    About this recipe: A deliciously smooth chocolate ganache recipe using only three ingredients. Plain chocolate chips are melted over a double boiler, then beaten with soured cream and vanilla extract.

    Ingredients
    Serves: 20 

    • 335g plain chocolate chips
    • 350ml soured cream
    • 1 teaspoon vanilla extract

    Method
    Prep:5min  ›  Cook:15min  ›  Extra time:20min  ›  Ready in:40min 

    1. Place the chocolate chips into a glass or metal bowl and set over the top of a pan of barely simmering water. Stir occasionally until melted and smooth. Remove from the heat and transfer the chocolate to a medium bowl.
    2. Add the soured cream and vanilla; beat with an electric mixture until smooth and creamy. If you let it cool down too much it will set up, so frost your cake while it is still liquid or reheat before using.

    This is definitely a slightly healthier way to make ganache. The soured cream givs a slightly unusual taste that wasn't really to my liking, but the others seemed to like it. It didn't set with a glaze for me  -  19 Jun 2012

    I was looking for a recipe for classic ganache to top a chocolate cheesecake with and came across this recipe. Since sweetened sour cream is a classic plain cheescake topping I gave this one a try for my chocolate cheesecake. It was the PERFECT compliment to the rich cheesecake. Dense but not too heavy and sweet but refreshing in compliment to the intense chocolate of the cheesecake.     used white chocolate instead and turned out great! i let it cool for a bit and used it for a filling for a carrot cake and then topped off the cake with a cream cheese icing. absolutely fabulous! definitely will be using this again!  -  26 Oct 2007  (Review from Allrecipes US | Canada)
