About this recipe:Flounder is stuffed and rolled with sauteed mushrooms, spinach and feta cheese, before being baked to perfection. Serve with a side salad, potatoes or freshly cooked rice.
8 large fresh mushrooms, sliced
225g spinach, rinsed and chopped
1 tablespoon crumbled feta cheese
4 (115g) fillets flounder

Preheat oven to 180 C / Gas 4.
Spray an unheated medium frying pan with cooking oil spray. Heat the frying pan over medium heat. Add the mushrooms and cook about 5 minutes or until the liquid released from the mushrooms has evaporated, stirring occasionally.
Add the spinach to the frying pan. Cook and stir about 2 minutes or until spinach is wilted. Remove from the heat and drain excess moisture. Sprinkle the feta cheese over the vegetables, then stir it in.
To assemble, place one-quarter of the spinach mixture onto the wide end of each fillet. Carefully roll the fillet around the spinach mixture. Use cocktail sticks to hold the end of each roll in place.
Spray an 20x20cm or similar sized baking dish with cooking oil spray. Place the fish rolls, seam side down, in the baking dish. Add 2 tablespoons of water. Loosely cover with foil.
Bake in a preheated oven for 15 to 20 minutes or until fish flakes easily when tested with a fork and is opaque all the way through.
If flounder is unavailable, substitute in halibut fillets or lemon sole.
