15g (1/2 oz) butter
1 clove garlic, peeled and chopped
1 tablespoon finely chopped onion
100g (4 oz) chicken livers, trimmed and chopped
2 tablespoons dry sherry
75g (3 oz) cream cheese, softened
salt and freshly ground black pepper to taste

Melt butter in a medium saucepan over medium heat. Stir in garlic, onion and chicken livers. Reduce heat to low, and simmer approximately 10 minutes, until chicken livers are tender and no longer pink.
Place chicken liver mixture in a blender with dry sherry, cream cheese, salt and pepper. Blend until smooth. Transfer to a medium bowl, cover and chill in the refrigerator approximately 2 hours before serving.

Loved it so much I have made it several times now. Not as an elegant starter, but as a weekend treat for me and the husband. I leave it in the tureen and serve with French toast and crackers. We open the vino, put the telly on and enjoy. An excellent recipe x - 18 Feb 2015
