Bacon Stuffed Turkey Legs

    A deicious turkey dish that's packed full of flavour. Turkey legs stuffed with peppers, onion and bacon. Enjoy with rice, potatoes or pasta.

    Ingredients
    Makes: 4 turkey legs

    • 4 turkey legs
    • 250ml olive oil
    • 2 green peppers
    • 1 large onion
    • 2 tablespoons salt
    • 1 pinch ground black pepper
    • 1 teaspoon dried oregano
    • 2 tablespoons distilled malt vinegar
    • 5 rashers streaky bacon
    • 2 tablespoons teriyaki sauce

    Method
    Prep:15min  ›  Cook:45min  ›  Ready in:1hr 

    1. Make numerous vertical slits in the turkey legs.
    2. In a small bowl, combine the olive oil with the salt, pepper, teriyaki sauce, vinegar and oregano. Marinate turkey legs in the oil mixture.
    3. Chop onion, green peppers and bacon into small squares (approximately the same size as the slits you cut on the legs). Fill each slit with one piece of pepper, onion and bacon.
    4. After the legs are stuffed, brown them in the oil mixture all around on medium-high. Lower temperature to low and cover. Cook for 45 minutes or until meat starts to separate from the bone. If the legs dry out when cooking, add a little water to the frying pan and lower the temperature.

    The flavor was really good. The recipe, however, did not say where to marinate. (My refrigerator solidified the olive oil.) It should also have said approximately how many slits to make per leg. I had too many left over onions/peppers/ and bacon pieces. It did not say what to do with thoset. The cooking time indicated was about half of what I needed (1 hr 20 minutes) until the juices ran clear.     My husband went and bought 4 packages of turkey legs after eating this meal. I didn't cut slits and stuff the legs. Just chopped everything up and threw it in the pot with corriander seeds. I didnt have the soy sauce but I didn't miss it. I did add water as suggested. I removed the bacon towards the end and cooked it fully in the microwave.     Pretty and easy to make, this recipe is certainly quite salty. I would halve the salt. It was helpful to pull the skin down, stuff the turkey legs and then replace the skin. It made the turkey quite juicy. Definitely worth making.  -  25 Nov 2006  (Review from Allrecipes US | Canada)
