120g butter, softened
30g Gorgonzola or other blue cheese
3 tablespoons fresh thyme, chopped
2 tablespoons fresh rosemary, chopped
2 tablespoons fresh parsley, chopped
1 teaspoon dried crushed chilli flakes
2 garlic cloves
2 tablespoons pine nuts
Salt and freshly cracked black pepper to taste
8 sirloin steaks (around 200g each)

Preheat the barbecue for medium-high heat.
Place the softened butter, blue cheese, thyme, rosemary, parsley, dried chilli flakes, garlic and pine nuts into the bowl of a food processor. Puree until incorporated, taste, then season to taste with salt and pepper.
Season the steaks on all sides with salt and pepper. Barbecue to desired doneness about 5 minutes per side for medium rare. To serve, top each with about 2 tablespoons of the butter.
