Barbecued Steak with Blue Cheese, Garlic and Herb Butter

About this recipe: Place a knob of this delicious fresh herb, pine nut and blue cheese butter on top of chargrilled steaks for an extra special summer meal. Serve with new potatoes and salad.

Serves: 8 

  • 120g butter, softened
  • 30g Gorgonzola or other blue cheese
  • 3 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon dried crushed chilli flakes
  • 2 garlic cloves
  • 2 tablespoons pine nuts
  • Salt and freshly cracked black pepper to taste
  • 8 sirloin steaks (around 200g each)

  1. Preheat the barbecue for medium-high heat.
  2. Place the softened butter, blue cheese, thyme, rosemary, parsley, dried chilli flakes, garlic and pine nuts into the bowl of a food processor. Puree until incorporated, taste, then season to taste with salt and pepper.
  3. Season the steaks on all sides with salt and pepper. Barbecue to desired doneness about 5 minutes per side for medium rare. To serve, top each with about 2 tablespoons of the butter.
